Olive Oil in the Family

ROSTO, run by sisters Tori Hill (Higgs 1993) and Ali Crawford (Higgs 1991), is a family-owned and run company producing fresh extra virgin olive oil. ROSTO was established by the Higgs family in 2004 using the olives from 60,000 olive seedlings which were originally planted on their property in Merriwa in 1992.

Ali and Tori’s parents, Rowie and Steve Higgs (the source of the name ROSTO) still manage the annual harvest and processing of the olives on site. Tori and Ali run the company, managing the sales and marketing.

After working in very different industries, helping to establish ROSTO’s business was a welcome change for Tori and Ali who both love the freedom of working for themselves. Back in 2004, they focused on building brand awareness with in-store tastings and food sampling, educating customers about Australian extra virgin olive oil—not an easy feat nearly 20 years ago when the gourmet food culture that now thrives in Australia was still in its early years.

When asked for her tip for those starting out in the food industry, Tori says: ‘Keep your product range simple and don’t be afraid to get your hands dirty!’
